Restaurant Impossible: Restaurants Cerca &c Are Impossible, Says Chef
Cercara is a restaurant in Milan, Italy, that has been serving up food to customers in a restaurant called Cercaro since 2002.
Now, in a new interview with CNBC, chef Cristian Calandra says the business model is too complicated and that his restaurant is no longer sustainable.
“If you take all the steps that we take, you can have an incredible restaurant, and that’s the case with Cercarra,” he said.
“Cercarras main customers are tourists, but I can tell you, I’ve been there for 20 years, and in the beginning of my career, we had two years of losses, but we have the best customer service in the world.”
The restaurant chain has been operating under a number of different names since the late 1990s.
But Calandra’s restaurant was one of the first in the city to serve the famous Cervantes pasta and a number other dishes, including lasagne and salted macaroni and cheese.
“It’s been a part of my life since I was a little kid, it’s the first thing I remember,” he told CNBC.
Cercara, who also runs the restaurant La Bistro, says the restaurant is struggling financially.
“We have a good base of customers, but the situation is changing,” he explained.
“The restaurant has a long way to go.””
